Cake Pops

Yummy note:
So another month has passed us by and this is my 3rd entry for the Secret Recipe Club. I was assigned to a blog by the name of Nomnivorous this month. The Nomnivorous blog is brought to life by a young lady in her twenties by the name of Emily. Emily has many stories and recipes to try out, plus you'll see how much she appreciates a variety of different foods. Looking through different blog posts, Emily talked about how she grew up on "damn good jams," and honestly, I did too, as my aunt always made some amazing rhubarb jam every year. I also almost went for the corn polenta recipe route due to how amazing the sweet corn is right now in season, but my other sweet tooth kept calling for another sorts of sweet... So back to the sweets, Emily mentioned she loved sweets and vanilla, so I went for the vanilla cake pops. I've done cake balls in the past but I thought this revamped post by Nomnivorous was perfect chance to update my recipe making some cake pops without a boxed mix! The finished product was such a hit at the party I took this too, all the kids and adults loved them!

Cake Pops

Recipe from Nomnivorous - Nix the Mix Funfetti Cake Recipe

Ingredients:
2 1/4 cups cake flour, plus more for dusting the pans
1 cup milk, room temperature
6 large egg whites (about 3/4 cup), room temperature
3 tsp vanilla extract
1 3/4 cups granulated sugar
4 tsp baking powder
1 tsp salt
12 tbsp unsalted butter (1 1/2 sticks), softened but still cool
1/4 cup sprinkles (Nomnivorous suggests you use long sprinkles, not round for best results)

Directions:
Heat oven to 350 degrees. Spray your 9x13 or 2 of the 8x8 cake pans) with nonstick cooking spray, and then dust the pans with flour. Pour the milk, egg whites, and vanilla extract into a small bowl and mix a bit. In another bowl, stir together the cake flour, sugar, baking powder, and salt. Next, add the butter into the flour bowl mixture and continue stirring until there are no big clumps, should just have like a crumbly texture. Add all but about a 1/2 cup of the liquid mixture to the flour crumbs and stir until well -moistened. Add in remaining milk mixture, along with the sprinkles, and beat for 30 more seconds. Pour evenly into prepared cake pans, and bake for 20-25 minutes, or until a toothpick to test comes out clean.

Let the cakes rest in the pans for a few minutes and then flip onto wire racks to cool. At this point you could start breaking up the cake for faster cooling. While cake is cooling prepare your 2 cups of "glue" for the cake pop treats!

Vanilla Buttercream Frosting
Ingredients:
14 tbsp unsalted butter, room temperature, slightly softened
1 2/3 cup powdered sugar
1 tbsp (yes, that is not a typo, a tablespoon, not teaspoon) vanilla extract
pinch salt
4 tsp milk

Directions:
Cream the butter until fluffy in appearance, and start adding in the powdered sugar, a little bit at a time so you don't get a big powdery mess!  Then, add the rest of your ingredients and stir for another couple of minutes until the frosting becomes nice and smooth. Place frosting in the refrigerator at least 15 minute to help set up before using in cake pops.

How to Assemble the Cake Pops
Take the semi-cooled cake and break it up into chunks and begin to crumble. Cake should be fully crumbled before you begin adding in your frosting. Next, add atleast half of your frosting to the cake crumbs, incorporating them well. I used my hands for most of this part, but a spoon will work ok also. You really need to feel how wet the cake mixture is, as you do not want it fall apart while making the cake balls. Continue to add more frosting until a good consistency has been reached, so you can form a ball. Once you form the cake balls, (note this recipe yields about 50 or so cake balls), place them into the freezer to set. Next, melt some chocolate chips or candy melts slowly so they do not scorch, and dip the end of the lollipop sticks into the melted chocolate and insert sticks about halfway into the cake ball.  Then let the cake pops rest again in the freezer so that they are solid. After this last freeze, dip the cake ball into the chocolate and finish with a swirl to get the extra coating off. Quickly, add your "pretty sparkles" as my daughter called it to finish the cake pops.
Extra Yummy note: A nifty little trick is to create like a cardboard base or styrofoam structure to stick your pretty cake pops in to dry. That way they dry beautifully with no flat sides!   I really loved the texture of how these cake pops turned out. The moistness and flavor closely resembled the cake pops from "that place mommy gets her coffee from," aka Starbucks :)

Ridiculously Easy Raspberry Jam

Yummy note: Alright, I can't believe I'm doing a post about a jam or a jelly, seriously all canning really scares the c-r-a-p out of me. Canning seems intimating to me, almost similar to the cooking a whole chicken fear I had, lol. Many blogs out there are featuring lots of canning, it seems like the latest rage by some, even though many of my older relatives have been doing it forever! Ok, back to the jam, I was spoiled with homemade jams and jellies quite often growing up, so when a friend from high school mentioned the other day she made this super easy jam, I immediately was like "give me the recipe, Breanne, please!"  And so here it is.. Yes two ingredients, that is it, I thought she was kidding. I didn't have the 4 cups of berries, so I cut the original recipe in half. So even if you are not an experienced canner, similar to myself, don't fear, try out this awesome easy jam recipe. You'll love the intense flavor, not to mention the fact that you know what is exactly in that jar of jam you are enjoying.

Ridiculously Easy Raspberry Jam

Ingredients:
2 cups fresh raspberries
2 cups sugar

Directions:
A tip the original recipe suggests is to heat the sugar up a bit before adding it to the fruit, as the warm sugar dissolves better.  So, do to that, pour your sugar in an oven-safe pan, and place in a 250 degree oven for about 15 minutes. Next heat up your berries in a large saucepan on the stove. Bring the berries to a full bubbly boil under a careful watch, mash them up as they cook, so that they don't stick on your pan. Stirring the berries constantly, bring to a hard boil. Next, add in your warm sugar to the squished berries and return to another boil. This last boil will last about 5 minutes or so, until it starts getting thicker. Honestly this is the toughest part of this jam! I wasn't really sure on how to gauge this "gel" state as the recipe called for, so you can refer here for some good tips. After your fruit mixture hits the gel state, pour into your jars for storage. I did not do any canning/processing on my jars here, as it makes a smaller batch, and I don't anticipate this jam lasting for more than a few weeks around our house :)

So....yeah, even if you do get into a jam with your jam, haha...  it is ok... So what do you do with the goo??  So I obviously ended up cooking the jam for too long and ended up with more of a fruity VERY sticky goo after it started to chill a bit.

Yeah, it was really sticky as you can see here, holding the jar upside down for a bit didn't phase the gooey jam one bit.

You can revive the jam by putting your jam back into a saucepan and heating it back up a little bit, while adding a couple tablespoons or so of water to the jam to get a smoother thinner consistency again. whew..we have that gel again for yummy jam! So not all is lost. The recipe here ended up making 2 little 8 ounce jars of jam, perfect one for refrigerator and one for the freezer. :)

The original jam recipe was located on this site: http://www.epicurious.com/recipes/food/views/Old-Fashioned-Raspberry-Jam-230700

quick lemon loaf

Yummy note: I came across this recipe the other day while I was in the local library. We were looking for some kid-friendly easy recipes when we saw this one in a cookbook called Fix-It and Enjoy-It! 5-Ingredient Recipes.  It looked simple enough, and not too many crazy ingredients, shoot, I think I had them all in my cabinet already! yes... So following this one by the book, we made this delicious lemon loaf, with an additional touch, FROSTING! We love our frosting in this house, so I added a simple powdered sugar frosting for the top.

Quick Lemon Loaf

Ingredients:
For the Lemon Loaf:
4 eggs
1 box of white/yellow cake mix
1 small box if instant lemon pudding
1/2 cup vegetable oil
1 cup lukewarm water

For the Frosting:
2 cups powdered sugar
1-3 tbsp water
1 lemon for juice and zest

Directions:
Preheat oven to 350 degrees. Pour cake mix, water, pudding, oil, and eggs in a large bowl and mix together well. We just did it with a whisk for about a minute or so until it was all combined well. Next, pour the batter into two lightly greased loaf pans and bake for about 40 minutes or until the center of the loaf tests clean.

For the frosting, mix 2 cups of powdered sugar and half of a lemon juiced. Next, start adding in some of the water, just enough so that the frosting starts coming together. Add in enough water to your likeness of the how thick or thin you would like the frosting to be. We like more of a thicker frosting, while you could add more water and make it into more of a icing/glaze instead. Top cooled lemon loaf with your icing and finish with a little lemon zest.

watermelon ginger limeaid cocktail

Yummy note: It's Secret Recipe Club time! If you've never heard of the Secret Recipe Club is, then check it out here Amanda's Cookin' and join us! The recipe I'm featuring this month is coming from Lynne's blog Cafe Lynnylu. Lynne's watermelon ginger limeaid. Lynne has a great food photography collection on her site here, so it was pretty cool to be picking from all her wonderful shots. I decided to pick out a drink from her blog for two reasons, 1-it appears she does routine fun little "Thirsty Thursday" entries and 2- I've never done a drink on my blog before, so what a perfect way to start! Below is my cocktail rendition of Watermelon Ginger Limeade.

Watermelon Ginger Limeade Cocktail

Ingredients:
about a half of a large watermelon, roughly 6 or so cups chopped watermelon
1/4 sugar
1/2 cup water
2 tablespoons fresh ginger, peeled and chopped
couple of limes, roughly 1/2 cup freshly squeezed lime juice
vodka, I used a watermelon vodka I had on hand already

Directions:
Chop up your watermelon into large pieces. Toss watermelon into blender. (Note, if you don't feel like turning on your blender, you can always just mash up your watermelon pieces by hand.) Pulse the watermelon chunks in the blender until it appears to be frothy and smooth. Pour the watermelon juice mixture through a colander to ensure the fibrous watermelon pulp is left over. In your large bowl, you'll see the pretty pink watermelon juice left behind from the colander. Discard the watermelon pulp and you should have about 4 cups of watermelon juice to use for your drink mix. Set aside juice to chill while you prepare your gingery simple syrup mix.

Next, chop up some fresh ginger, and add to a small saucepan with the sugar and water. Bring to a boil and simmer for 10 minutes. Cool liquid to room temperature. (Note: I couldn't wait to try my drink, so I really skipped through this cooling step, and added some ice cubes to the syrup mixture to speed it up a bit.) In a larger pitcher or container, combine chilled watermelon juice, ginger syrup, and your freshly squeezed lime juice together. At this point, you can serve your watermelon ginger limeaid (in the non-alcoholic form).

For those that want the extra cocktail kick, add a shot of vodka to your drink. Serve your drinks in a pretty sugar rimmed glass with watermelon wedges. Sit back and enjoy this summery drink. :)

Cream of Asparagus and Potato Soup

Yummy note: I had some pretty fresh asparagus left from a recent shopping trip. However, I wasn't quite sure how I was going to use up. I had my share of roasted/grilled asparagus the night before, so I wanted something different. We had some nice steaks to grill up, so I thought I'd pair it up with a simple asparagus soup. Amazingly fairly easy to put together with a fresh and not too heavy taste, perfect for the summer.

Cream of Asparagus and Potato Soup

Ingredients:
about 1/2 lb. asparagus, ended removed and trimmed
about 3 potatoes, cut up
enough water to cover vegetables (about 2 cups water)
1-2 tsp chicken bouillon seasoning
1 tsp garlic minced
2 tablespoons butter
5 slices bacon, cooked
2 tsp dried onion flakes
1 cup milk
all-purpose seasonings/herbs to taste (I just did a few shakes of seasonings here and there to get it to my taste preference at the end, so adjust accordingly.)
Salt and pepper to taste
Garnish: leftover bacon crumbles and few french fried onions

Directions:
Melt the butter and add onions to cook up for couple minutes. Add the asparagus, potatoes, water, and seasonings to taste. Simmer all ingredients until the potatoes are cooked and some of water has boiled off. If mixture appears to be too watery still, pour off any remaining water. Let the soup mixture slightly cool and then proceed to puree in a blender. Next, add some crumbled up bacon to the blender and add in milk to your preference on thickness. Puree until smoothness is desired. Season with additional salt, pepper, and seasonings to taste. Garnished with some french fried onions and bacon crumbles.

tri-color mini cheesecakes

Yummy note: This last weekend, I went strawberry picking with the family. My daughter, Alicia, loved it. At the end of our picking adventure, the first thing she requested to do with them was to make strawberry cheesecake. After I told her about how we were going to make the strawberry cheesecake it became more prominent that she just wanted plain cheesecake with whipped cream and the strawberries to be on top, not in it... So we went a different route. We decided that it must be pretty, I mean what else does a 5 year old sous chef want?! So why not celebrate the 4th of July with some festive looking cheesecakes! They are just adorable and gave us a great excuse to try out our new Babycakes Mini Cupcake Maker. Note: we doubled the original recipe found here so feel free to cut back if you want a smaller batch. Also, you do not need a cupcake maker to make these fun little treats, an oven works just fine. See notes below for baking times/temps.

Ingredients:
2 packages cream cheese, softened (8 ounces)
1/2 cup sugar
2 eggs
1 teaspoon vanilla
16 vanilla wafers
16 mini oreo cookies
food coloring
whipped cream
fresh strawberries to top

Directions:
Set the cream cheese out to soften ahead of time. When soft, beat the cream cheese until smooth. Next, add in the sugar, eggs, and vanilla and beat until smooth. Separate cream cheese filling into different bowls for coloring. We used 2 additional colors, (red and blue) but you can use whatever colors you'd like. Add in drops of food coloring to filling and stir until color is achieved.

Place a mini muffin/cupcake wrapper in each well of the cupcake maker or mini muffin pan. Place a vanilla wafer or a broken up mini oreo in the bottom of each cup. Spoon in about 2 tablespoons or about 3 heaping teaspoons of the cream cheese filling over your cookie crust. If you are using the cupcake maker, bake for about 6 to 7 minutes or until set. We did not preheat the cupcake maker for this. If baking cheesecakes in the oven, bake in a preheated 325 degree oven for about 20 minutes or until set. Carefully remove each cheesecake and place on a rack to cool. Refrigerate cheesecakes until well chilled and enjoy! Eat plain, or top with whipped cream and strawberries. Makes about 32 mini cheesecakes.

Coke Zero Barbecue Sauce

Yummy note: So I've been searching and trying to find the perfect barbecue sauce recipe for quite awhile now. I mean I do have the old family standby that I know that when I make this recipe it will work, however this sauce is loaded with about a cup of brown sugar. I really wanted to be able to find a little bit better calorie wise, lighter barbecue sauce for us to smother our food in. :) In the past, I've used this barbecue sauce recipe  here too when I was in a pinch and didn't have enough brown sugar on hand one, so I decided to modify this just a bit and used a diet cola. I used Coke Zero for this, as I really am not a fan of many diet sodas and the aftertaste they have, so I was surprisingly happy when I finished this barbecue sauce that it was delicious.

Coke Zero Barbecue Sauce

Ingredients:
1 cup Coke Zero
1 cup ketchup
1/4 cup Worcestershire sauce
2 tsp grape jelly
1/4 cup Chili sauce
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper

Directions:
Combine all the ingredients in a saucepan and bring to a boil over medium heat.

Stirring frequently, reduce the heat and keep simmering. The sauce should start to thicken up and reduce.

Probably 5-10 minutes, it will start to take up shape and become thicker and start turning a nicer darker color. Let sauce cool and pour into a container to keep in refrigerator or use immediately.
